Don’t Toss Out Your Pumpkins

Letter to the Editor, October 30, 2015

Re: Are pumpkins wasteful?

A letter in Monday’s Star suggests that it is wasteful to grow Hallowe’en pumpkins and then throw them out. But we don’t have to throw them out. We can remove the seeds and bake them, and after Hallowe’en the flesh of the pumpkin can be cooked.

As long as it is cleared of residue from candles and used in a timely fashion, there are many options for cooking pumpkins, and many recipes on the Internet – from soups to breads. Indeed, pumpkin is a highly nutritious vegetable and it is a shame to waste it.
